I can’t imagine how you could play even vanilla arma with just a controller. However, once you’ve connected your controller to your PC, you can just rebind the relevant controls by pressing escape<configure<controls. Once you’re in there, you’ll see how many controls there are, and how daunting it would be to play with just a controller.

Arma heli controls aren't too bad. DayZ SA definitely made cars harder than Arma by making them manual, but I'd be surprised if they do anything too stupid with helis (such as Arma 3's advanced flight model). There is a learning curve, and it will never be Battlefield easy. But you can master them just fine with keyboard and mouse.
